Maca & Quinoa Chocolate Cupcakes

Studies say a daily dose of chocolate can be healthy for you so when I stumbled on this healthy chocolate recipe from Peggy Kotsopoulos, beVibrant – I just had to make them. Who would have known you could put quinoa in cupcakes? Combine that with the health benefits of Maca and you have one nutritious and energizing cupcake. Oh, and don’t forget the frosting made out of cashews – genius!

I made a few substitutions in my batch. As usual, I used Trader Joe’s Cookie butter instead of Walnut butter; a combination of Coconut and Spelt flour for the Brown Rice flour and strawberries instead of raspberries. My husband is allergic to cashews so I made a few with the frosting and some without.

Maca & Quinoa Chocolate Cupcakes

Here’s what you’ll need:
• 1 Tbsp ground chia, mixed with ¼ cup water
• 1 ½ ripe banana
• 2 Tbsp coconut oil
• ½ cup walnut butter
• 2 tsp vanilla extract
• 1 cup coconut sugar
• 1 cup brown rice flour
• ½ cup cooked quinoa
• 3 Tbsp maca powder
• 1/3 cup cocoa powder
• 1 tsp baking powder
• 1 tsp baking soda
• ½ tsp salt
• chopped walnuts

Raspberry frosting:
• 1 cup raw cashews
• ¼ cup maple syrup
• 1 cup raspberries
• Almond Milk

Directions:
Preheat the oven to 350 F.

Place ground chia in a small bowl. Add warm water and mix with a fork. Set aside for gel to form. Mash banana in large bowl then add oil, nut butter, vanilla and milk and stir to mix. Add the rest of the ingredients and mix until well incorporated. Grease rubber mini muffin tins with coconut oil. Drop in batter and bake 25 -30 minutes, until toothpick comes out clean.

For the frosting: Add all ingredients to high power blender and blend until smooth. Add a splash of Almond milk just to blend the ingredients but frosting should be thick. Transfer to piping bag and pipe onto cupcakes.

The Verdict: My cashew frosting needs a little work but I am pretty impressed on how they turned out. They are not overly sweet and fairly simple to make. For anyone looking for a healthy sweet alternative to traditional cupcakes, give these a try.
